By now, you've probably heard of the viral sensation known as baked feta pasta (or The Pioneer Woman's fun twist called baked feta egg casserole), but TikTok has recently given us another reason to fall in love with the salty, tangy flavors of feta cheese. And it's called crispy feta fried eggs!

Similar in resemblance to pesto eggs, this new TikTok video from recipe developer Grace Elkus features an extra crispy fried egg that's cooked in a skillet with sizzling feta, then served in a tortilla with mashed avocado. 🤤 It's ready in just five minutes, so it's basically the perfect quick breakfast.

In her video on TikTok, Elkus says, "This is what I make when I'm starving and need food in 5 minutes." And, with over 32 million views across TikTok and Instagram, it's clear that this fried feta egg recipe is definitely worth the hype.

So how do you make the five-minute feta fried eggs? It's so easy that Elkus says "this barely needs a recipe but here goes..."

You only really need two ingredients to make this recipe in its most basic form: feta and eggs. Look for good quality feta that's packed in brine or comes in a block rather than the kind that's pre-crumbled. It'll melt easier and provide even more flavor. (You'll need about 1/3 cup once crumbled.) Grab your egg and get cracking! To make this recipe the way Elkus does, you'll also need mashed avocado, lime, tortillas, black pepper, and red pepper flakes. Note: the feta is salty so you don't need to season with additional salt.

So how do you make feta fried eggs?

Elkus starts out by heating up a small nonstick or cast-iron skillet over medium heat and adds the crumbled feta in a circle around the pan; leaving a space in the center where the egg will go. Crack the egg into the center of the cheese and season with black pepper and red pepper flakes. Cover and cook until the whites are set and the edges are crispy! Transfer to a tortilla that's been topped with mashed avocado and a squeeze of lime juice. Fold, eat, and enjoy!

While Elkus shows us her avocado and tortilla version, she also suggests serving it on top of toast or hash browns. Looking to make the recipe your own? You can skip the feta altogether if it's not your thing and use any crumbly cheese, like goat cheese or Cotija, or even shredded parmesan! Swap the avocado for refried beans, pesto, or chili crisp, if you like some spice. All the options are truly egg-cellent! 😀
