When it comes to home cooking, Alex Drummond definitely takes after her mother!

The Pioneer Woman's oldest daughter has been very busy in the kitchen lately, whipping up everything you could imagine: homemade salsa, tortilla soup, sweet potato fries, and more. At the start of the new year, Alex and her husband Mauricio decided to focus on eating healthier, so they've been spending more time meal prepping together. And you know what? They make a great team!

"Whenever Mauricio and I cook dinner, he always makes the meats and I always do the sides," Alex explained on Instagram.

One of their favorite side dishes is so simple to make in big batches and good for you. It involves vegetables, sweet potatoes, olive oil, and a few basic spices.

"This is a super easy, healthy side that we make like every week," Alex said. She likes to add a couple spoonfuls of a "yummy sauce thing" from Trader Joe's (😂) that gives the dish "a lil' heat."

In other words, the big-batch veggie and potato mixture is easy to customize based on your preferences. Mauricio cooked up some Trader Joe's carne asada to pair with Alex's side, making it a well-balanced and super flavorful meal. Check out Alex's full recipe below!

Alex's Favorite Healthy Side Dish

  • Chopped sweet potatoes
  • Sliced Brussels sprouts
  • Chopped red onion
  • Minced garlic
  • Olive oil
  • Garlic, salt, and pepper to taste
  • Trader Joe's Crunchy Chili Onion spread (optional)

Directions: Toss all ingredients together and spread out evenly on a sheet pan lined with tin foil. Bake at 400 degrees for around 25 minutes, or until sweet potatoes are tender. Add a couple tablespoons of Trader Joe's Crunchy Chili Onion spread for extra heat!
